OST file holds emails of Outlook user mailbox out of Exchange Server. It is a copy of Outlook mailbox mounted on Exchange Server and created when MS Outlook client fails to establish connection with Exchange mail server. Changes made by outlook user in his/her mailbox during offline period is stored in OST file. When connectivity between Exchange server and MS outlook is restored, changes of OST file are transferred to Outlook PST files. You can Convert OST to PST manually, using Import Export Wizard of MS Outlook 2003, 2007 and 2010 versions.
However, this inbuilt option works till your Outlook mailbox is connected with Live Exchange Server.
